Avocado Cilantro Sauce and Zucchini Noodles

Since it's the new year and 'new year, new me' seems to be saturating Facebook and Instagram captions, I figured it was only fitting to actually incorporate a healthy recipe into my weekly dinner menu. After trolling Pinterest (pretty much my happy place), I found this amazing Mean Green Sauce recipe from Pinch of Yum that was ideal for using as a salad dressing, veggie dip, or even over zucchini noodles like I did last night. 

Let me just say, I absolutely love this sauce - the fact that it's so versatile, actually tastes good, and blends a variety of healthy greens into one final product just reiterates my quick throw something together for dinner mantra. Give this one a try, you seriously won't regret it. Oh and an even better plus is you that you don't even need a food processor to recreate it - I just used my blender because I'm cheap AF and didn't feel like venturing to Target to purchase one. You're welcome.

 

Ingredients:
*makes about 2 cups (8-servings)

1 avocado
1 cup packed with fresh parsley & cilantro leaves
Juice of 1 lime (or two), squeezed
1 jalapeno, ribs and seeds removed
1/2 cup water
1/2 cup olive oil
1/2 cup pistachios, shelled (I actually didn't use these, but I'm sure they would taste great in it!)
Salt + pepper, to taste
Crushed red pepper flakes (I added this for a little kick)

For green sauce:

Blend all ingredients together.

If you want it a little more watery, for a salad dressing - just add a little more water.

For zucchini noodles:

Spiralize zucchini with spiralizer or mandolin

Sprinkle salt over zoodles and let sit for 10 minutes (this lets the zucchini 'sweat' out water).

In a frying pan over medium heat, add 1 tablespoon of olive oil over.

Add zoodles to heat up.

Top with green sauce & serve!
